Question Steps for off season storage

I have an 1800xr with a Mercury 125 ob. I am planning to store the boat in my unheated garage in NH. What steps do I need to consider for the offseason ?

If it's going to be stored in my garage, I assume the Sunbrella boat cover I have will suffice ?

What do I need to do for the engine ? Do you run the gas out of it ? Keep gas in it with fuel stabilizer ?

What other things do I need to do for other parts of the boat ?

Any and all suggestions are welcomed.

Put stabilizer in the gas tank and run the engine for 10 minutes to get the stabilizer into the carb. Then disconnect the fuel line and run it dry. I would also change the gear lube.

Don't forget to spray fogging oil the cylinders thru the carbs.
