How do I remove the seat backs to gain access to the engine compartment?

I have the same year and model boat as you. recently i needed to get to the fresh water washdown hose. First, remove the seats and lift the motor cover. There are 2 screws that hold the piece that spans the middle transom just above the motor. One screw on the port, and also on the starboard. once the 2 screws are remove that whole piece slides towards you and provides significantly more headroom for motor work.
