Jeff, do a search for "oil pressure switch" and see the thread started by Hairy Lady.

2001 2800 SCR, what engine(s)? Yep OP switch is first thing that comes to my mind. Do you have an electric fuel pump? If not then no OP switch.
Carb or fuel injection?

You really need to provide more info on the engine. The boat modle and Merc really tells us nothing. Help us to help you.
For instance if I had an engine issue I would post that my 2004 Merc 6.2L MPI would not start and keep running.

Wires, plugs, fuel filter and the pre-filter have all been gone through? You can hear the fuel pump pressurizing? Wiggle the shutoff switch? How old is the fuel? has the fuel been treated? Did you try bypassing the fuel and pre-filter and rigging an external tank to the fuel pump?

I believe shrew is refering to the filter/screen on the gas pick-up tube inside the gas tank. There could be debrie in the tank that gets sucked into the filter starving the engine. Once engine dies it floats away allowing gas flow again. Does it die every time you start it or just sometimes?

Yep first easy question is if the saftey switch is in the run position. I am assuming this is not the problem because it runs sometimes.
Did you check for spark? If spark then a fuel issue. Spray some starting fluid into the air intake and see if engine runs on that for a few seconds.

Had a similar behavior once on my mercruiser 5.7. It came out to be rotted bed electrical connection of fuel pump.
