My experience
I have done this in a 2800 SCR. It took a 9k BTU Marinaire and we've been happy in the Virginia/Carolina heat and humidity of summer. The Install/User Guide (attached) on page 13 has the recommended volume formula for sizing. Two important items - first, the space that the unit is installed in needs a "return" grate so it can pull air from your cabin to cool or heat. I put a piece of filter material behind it to reduce having to clean the coils/fins of the Marinaire unit which will otherwise accumulate dust and dirt that reduces efficiency over time. Second, you need to move the temperature sensor that is by default on the side of the unit. It needs to go inside the cabin (I put mine in the exterior of the return grill). Since it sounds like you need to install this in the space where the fridge is, that space is going to read hotter or colder than your cabin, so the thermostat will be controlling your temps based on that space and not your cabin.
