Default On the trailer with earmuff cooling: Moving the throttle kills the engine

I have only had the boat a short time...

Is there some kind of safety interlock that kills the engine if you try to put it into gear when on the trailer with earmuff cooling?

No but there is a shift interrupt switch which temporarily shorts out the ignition when shifting out of gear. When shifting you must use quick decisive shifts in and out of gear to not kill the engine nor put excessive wear on the dog clutch. A misadjust shift cable or worn lower cable will cause issues with killing the engine. See Mercruiser manual for Alphas under Documents of this site for instructions on how to adjust.

Anything unusual happen recently, like an overheat?
You'll probably end up replacing your lower shift cable. You may be able to adjust it and get on the water, but it will need to be replaced.

I think he's afraid of the spinning props.
