Since you have a carburetor and not MPI you don’t have an IAC. The problem sounds more like the shift interrupt switch. Are you making quick shifts out of gear? Too slow of a shift can cause stalling. Else the lower shift cable may need replacement.

Is this a new problem?

If you have water in the fuel the engine would run bad all the time. Being a new boater you may be shifting in and out of gear too slowly, if you are hearing chattering you are shifting to slowly. That noise is the dog clutch slipping, this cause excessive wear.
