Exclamation Engine alarm and loss of power

Hello everyone,

I have a big problem with my Maxum 2700, equipped with a Mercruiser 5.7L 350 CID engine. When I throttle up, an engine alarm goes off and reduces the engine power for a moment, then it revs up again, sounds idle, accelerates on its own, etc... In short, it's not working properly.
If I cruise at 1200 RPM, it accelerates on its own to 2200... then the alarm goes off and it reduces power again.
I think the carburetor is not the original one. That could be a lead...
Do you think the module that triggers the alarm and reduces engine power could be responsible for this issue?
If yes, do you have the reference for this part?

I would suspect the knock sensor is limiting rpm then recovering. Do you hear a knock right before this occurs? How old is the fuel? What octane? Ethanol?

Thank you for your answer, no particular noise to note. The gasoline is new 95SP. Do you know the reference of the sensor?

Changed Title to a meaningful description.

Technically, MOST threads are requests for help. Aside from stating the obvious, a title "Help, Please" doesn't scale well. Imagine if all threads were titled "Need Help".
